Per preparare delle buone meringhe bisogna avere delle uova di primissima qualità come quelle che ci porta in Bottega la nostra allevatrice Giovanna. Le raccoglie fresche ogni giorno e dopo minuziosi controlli ce le consegna perchè arrivino sulle vostre tavole.

Ecco la ricetta per le meringhe con le uova di Giovanna.

Ingredienti per 6 persone
125 gr di albume (indicativamente tre uova medie)
150 gr di zucchero a velo
190 gr di zucchero semolato

Versate gli albumi e lo zucchero semolato in una planetaria (oppure in una ciotola se avete lo sbattitore elettrico) e sbattete con cura fino a che il composto non risulterà liscio e gonfio; aggiungete a poco a poco anche lo zucchero a velo. In tutto dovrete mescolare per un quarto d’ora circa. Per vedere se è lavorato a sufficienza potete fare la prova del cucchiaio. Poi prendete due o tre pirofile e copritene il fondo con della carta da forno; con delle sac-à-poche disponetevi dei ciuffetti di composto della dimensione di un’unghia. Se la giornata è bella si asciugheranno da sole in 4-5 ore; in inverno basta appoggiare le teglie sopra il termosifone o accanto alla stufa. Le vostre meringhe saranno pronte quando si staccheranno senza difficoltà dalla carta. Enjoy!
